  • 2 boneless skinless chicken breasts (56 ounces each) or 4 thin sliced chicken breasts
  • 2 cups seasoned parmesan breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray (non-aerosol)
  • Shredded parmesan cheese (for topping)

Instructions

  1. Slice each chicken breast in half lengthwise and pat dry.
  2. Set up a breading station: one bowl for breadcrumbs and another for whisked eggs mixed with salt and pepper.
  3. Dip each chicken piece into the egg mixture followed by pressing it into the breadcrumbs.
  4. Preheat your air fryer to 390°F and lightly spray the basket with olive oil. Arrange the chicken in a single layer and spray lightly again.
