  • 1/4 cup pitted green olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash and cut the new potatoes into even sizes.
  2. Boil the potatoes in salted water for 15-20 minutes until tender; drain and cool slightly.
