  • 2 1/2 cups graham cracker crumbs
  • 1/8 cup brown sugar
  • 10 tablespoons unsalted butter (melted)
  • 2 cups apple cider (reduce down to 1/2 cup)
  • 24 oz cream cheese (room temperature)
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream (room temperature)
  • 4 large eggs (room temperature)
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C). Combine graham cracker crumbs and brown sugar in a bowl. Stir in melted butter until evenly mixed. Press mixture into the bottom of a springform pan.
  2. In a saucepan over medium heat, simmer apple cider until reduced to about half a cup. Set aside to cool.
  3. In a mixing bowl, beat cream cheese and white sugar until smooth. Add sour cream, vanilla extract, eggs, brown sugar, flour, ground cinnamon, and reduced apple cider; mix until combined.
  4. Pour filling over crust and bake for about 80 minutes or until slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours. Before serving, top with melted butter mixed with apple cider and sprinkle with cinnamon-sugar.
