  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (streusel)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven and prepare the crust by crushing the cookies and mixing with melted butter; press into the bottom of a springform pan.
  2. In a skillet over medium heat, cook sliced apples with brown sugar and cinnamon until tender.
  3. Beat together cream cheese and granulated sugar in a bowl; add yogurt and mix in spices followed by eggs until smooth.
  4. Layer half the cheesecake filling in the crust followed by half the cooked apples; repeat layers and swirl slightly.
  5. Prepare streusel topping by mixing melted butter with flour, brown sugar, and oats; sprinkle on top before baking.
  6. Bake until set but slightly jiggly in the center; cool completely before refrigerating.
