  • 2 medium apples
  • 30 g light brown soft sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 1 tsp cornflour (cornstarch)
  • 10 g unsalted butter
  • 8 g light brown soft sugar
  • 17 g plain flour
  • 175 g softened unsalted butter
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g softened unsalted butter for frosting
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon for frosting
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling and chopping the apples. Cook them with light brown sugar, cornflour, cinnamon, and mixed spice over low heat until soft. Cool completely.
  2. Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon with unsalted butter until crumbly. Bake until golden.
  3. Preheat your oven to 160C Fan/180C/350F and line cupcake tins. Cream together softened butter and light brown sugar, then add eggs one at a time. Fold in self-raising flour, cinnamon, and mixed spice.
  4. Divide batter into cases and bake for 20-25 minutes until golden brown. Allow to cool completely.
  5. Create holes in cooled cupcakes for the apple filling and top with buttercream frosting followed by the crumble topping.
