  • 1 cup whole milk
  • 1 large egg
  • 1 tablespoon unsalted butter (melted and cooled slightly)
  • 1 teaspoon vanilla extract
  • 1 cup grated apple (about 1 medium apple)
  • Butter or vegetable oil for skillet
  • 1/2 cup maple syrup (warmed gently)
  • 1 teaspoon vanilla extract or the scrapings of 1 vanilla bean

Instructions

  1. In a medium bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, salt, and other dry ingredients.
  2. In another bowl, mix milk, melted butter, egg, and vanilla extract until well combined.
  3. Combine wet ingredients with the dry mixture gently until just blended; some lumps are okay.
  4. Fold in grated apple until evenly distributed.
  5. Preheat a skillet over medium heat and lightly grease it with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top; flip and cook until golden brown.
  7. Keep cooked pancakes warm in an oven set to 200°F while finishing the batch.
