  • 1 lb. medium pasta shells
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • ¼ cup Parmesan cheese, shredded
  • Optional: 2 large yellow onions (for caramelizing), turkey bacon or sautéed mushrooms

Instructions

  1. Caramelize onions by slicing them and cooking in butter and olive oil over medium heat for about 40-50 minutes until golden brown.
  2. If using turkey bacon, cook it in a skillet over low heat until crispy.
  3. Boil salted water and cook the pasta shells until al dente.
  4. In a separate pan, melt butter; whisk in flour until golden. Gradually add cream and milk while stirring. Season with spices and bring to a simmer.
  5. Stir in cheeses until melted, then fold in cooked pasta and caramelized onions.
