  • 2 large chicken breasts (sliced into thin fillets)
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 3/4 cup mozzarella cheese (grated)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Season chicken fillets with salt, pepper, and half of the minced garlic; place in a baking dish.
  3. In a bowl, blend softened cream cheese and heavy cream until smooth. Mix in remaining garlic, onion powder, paprika, Italian seasoning, Parmesan, and half of the mozzarella.
  4. Spread the sauce over chicken; add sun-dried tomatoes on top.
  5. Cover with foil and bake for 20 minutes.
  6. Uncover and stir in spinach; top with remaining mozzarella.
  7. Bake uncovered for an additional 10 minutes until cheese is bubbly.
