  • 4 cloves minced garlic
  • 2 teaspoons onion powder
  • 3 tablespoons soy sauce or coconut aminos
  • 3 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • Salt and black pepper to taste
  • 3 large zucchini
  • Kosher salt to taste
  • 8 ounces feta cheese
  • 3 tablespoons heavy cream or milk

Instructions

  1. Marinate the flank steak by mixing Dijon mustard, garlic, onion powder, soy sauce, olive oil, and balsamic vinegar. Season the steak with salt and pepper before adding it to the marinade. Let it rest for at least 2 hours (or overnight).
  2. Preheat your grill to high heat and brush the grates with oil.
  3. Grill the flank steak for about 3-5 minutes per side for medium-rare doneness. Remove from heat and let rest.
  4. Grill zucchini slices brushed with olive oil and sprinkled with salt alongside the steak until tender.
  5. For the glaze, boil reserved marinade until thickened.
  6. Blend feta with heavy cream until smooth.
  7. Serve sliced steak over whipped feta and grilled zucchini, drizzled with balsamic glaze.
