  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a loaf tin with baking paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Add canola oil, milk, sugars, eggs, and vanilla extract; stir until well combined.
  3. Sift in the flour, baking powder, and salt. Gently mix until just combined—don’t overmix!
  4. Pour the batter into the prepared tin and bake for about 45-55 minutes, or until golden brown and a skewer comes out clean.
  5. Cool in the tin for 10 minutes before transferring to a wire rack.
