  • 2 medium sweet potatoes, peeled and chopped
  • 1 large yellow onion, chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1 medium head broccoli, chopped into florets
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lined sheet pan, toss sweet potatoes and onion with olive oil, salt, garlic powder, and chipotle powder. Roast for 20 minutes.
  3. Add broccoli to the pan, drizzle with olive oil and sprinkle with salt. Place chicken on the pan and brush with BBQ sauce. Return to the oven for an additional 15-20 minutes until chicken is cooked through.
  4. Shred the chicken on the pan using two forks and mix with remaining BBQ sauce.
