  • 4 lbs chicken parts (bone-in, skin-on thighs and breasts)
  • 2 tbsp olive oil
  • 1 tsp Kosher salt
  • Freshly ground pepper
  • 1 cup grapes (seedless, halved)
  • 1 cup almonds (thinly sliced)
  • 2 stalks celery (finely diced)
  • 3 scallions (thinly sliced; white and green parts)
  • 2 tbsp dill (fresh, chopped)
  • 1 tbsp parsley (fresh, chopped)
  • 1 cup mayonnaise
  • Juice of 1 lemon
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat the oven to 350°F. Rub chicken with olive oil, salt, and pepper. Bake for 45-55 minutes until cooked through.
  2. Let the chicken cool before shredding into bite-sized pieces.
  3. In a large bowl, mix shredded chicken with grapes, almonds, celery, scallions, dill, and parsley.
  4. In a separate bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Combine with the chicken mixture.
  5. Chill in the refrigerator for at least one hour before serving.
