  • 16 oz rotini pasta
  • 10 oz turkey slices
  • 1 cup English cucumber
  • 2 cups grape tomatoes
  • 1 ½ cups bell peppers
  • ½ cup red onion
  • 8 oz black olives
  • 8 oz fresh mozzarella pearls
  • ½ cup parmesan cheese
  • ½ cup parsley
  • 1 ¼ cup olive oil
  • 3 tbsp lemon juice
  • 1 ½ tbsp Italian seasoning
  • 2 tsp sugar
  • 3 tbsp apple vinegar
  • 2 tsp garlic
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, apple vinegar, Dijon mustard, salt, and pepper.
  3. In a large bowl, combine cooled pasta with chopped vegetables, turkey slices, mozzarella pearls, parmesan cheese, and parsley.
  4. Pour dressing over the salad and mix gently until well combined.
  5. Chill in the refrigerator for at least an hour before serving for the best flavor.
