- 16 oz rotini pasta
- 10 oz turkey slices
- 1 cup English cucumber
- 2 cups grape tomatoes
- 1 ½ cups bell peppers
- ½ cup red onion
- 8 oz black olives
- 8 oz fresh mozzarella pearls
- ½ cup parmesan cheese
- ½ cup parsley
- 1 ¼ cup olive oil
- 3 tbsp lemon juice
- 1 ½ tbsp Italian seasoning
- 2 tsp sugar
- 3 tbsp apple vinegar
- 2 tsp garlic
- 1 tsp Dijon mustard
- ½ tsp salt
- ½ tsp black pepper
- Cook rotini pasta according to package directions until al dente. Drain and rinse with cold water.
- In a bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, apple vinegar, Dijon mustard, salt, and pepper.
- In a large bowl, combine cooled pasta with chopped vegetables, turkey slices, mozzarella pearls, parmesan cheese, and parsley.
- Pour dressing over the salad and mix gently until well combined.
- Chill in the refrigerator for at least an hour before serving for the best flavor.
