  • 1 lb peeled and deveined shrimp
  • 12 oz smoked sausage (Andouille recommended)
  • 2 medium bell peppers (1 red, 1 green)
  • 1 large onion
  • 3 cloves garlic
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 14.5 oz can diced tomatoes
  • 2 tbsp Cajun seasoning

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers, and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat; brown the seasoned chicken thighs on both sides (about 6 minutes), then remove from the pot.
  3. Sauté onions and bell peppers until softened (about 5 minutes), adding garlic in the last minute.
  4. Return chicken to the pot, add sausage, rice, diced tomatoes (with juice), broth, and Cajun seasoning; bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 25 minutes or until rice is tender.
  6. Stir in shrimp during the last 5 minutes of cooking until they turn pink.
