  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat oven to 400°F.
  2. Peel and slice sweet potatoes into thin medallions; arrange in a baking dish.
  3. In a saucepan over medium heat, combine butter, brown sugar, water, spices, and salt until melted and well mixed.
  4. Brush about ¾ of the sauce over the sweet potatoes; cover with foil and bake for 45-50 minutes.
  5. Remove foil, pour remaining sauce over sweet potatoes, top with pecans and marshmallows.
  6. Broil for 1-2 minutes until marshmallows are toasted.
  7. Cool for 10-15 minutes before serving.
