  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat your oven to 325°F (160°C) and line a square baking pan with parchment paper.
  2. In a bowl, mix chocolate cookie crumbs, melted butter, and sugar until combined. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until creamy.
  4. Pour the cheesecake mixture over the crust and spread evenly. Bake for 30-35 minutes until set but slightly jiggly in the center.
  5. Allow to cool completely before spreading cherry pie filling on top. Chill in the refrigerator before slicing.
