  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • For Cream Cheese Filling: 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a larger bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Gradually mix dry ingredients into the wet mixture while alternating with milk until just combined. Gently fold in floured blueberries.
  4. In another bowl, beat cream cheese with sugar, egg, and vanilla until smooth.
  5. Pour half of the bread batter into the prepared pan. Spread cream cheese mixture over it and top with remaining batter.
  6. Bake for about 55-65 minutes or until a toothpick comes out clean. If browning too quickly, cover loosely with foil.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
