  • 1 cup plain bread crumbs
  • ½ cup milk
  • 2 eggs
  • 1 cup diced onions
  • 1 cup diced bell pepper
  • 1 jalapeño, diced
  • 1 cup apricot jam (for glaze)
  • ½ cup bourbon (for glaze)
  • ¼ cup dark brown sugar (for glaze)
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp all purpose seasoning (Tony's brand)
  • 2 tbsp Worcestershire sauce
  • ¼ tsp salt and pepper
  • ½ cup BBQ sauce (for glaze)
  • ¼ cup water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, milk, eggs, onions, bell pepper, jalapeño, onion powder, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in a baking dish or loaf pan.
  4. For the glaze, mix apricot jam, bourbon, dark brown sugar, barbecue sauce, and water in a separate bowl until smooth.
  5. Pour half of the glaze over the meatloaf and bake for about 75 minutes or until the internal temperature reaches 160°F (70°C).
  6. Let it rest for 10 minutes before slicing and serve with remaining glaze drizzled on top.
