  • 1 lb small cremini or button mushrooms
  • 1 tbsp butter
  • 1 small yellow onion (minced)
  • Fresh thyme leaves (from 1 small sprig)
  • Black pepper (to taste)
  • 1 (5.2 oz) package garlic and herb Boursin cheese
  • â…“ cup panko crumbs
  • 2 tbsp finely grated parmesan
  • 1 tbsp finely chopped parsley
  • 1 tbsp olive oil

  2. Remove stems from mushrooms and finely mince them.
  3. In a skillet, melt butter over medium heat; add minced stems, onion, and thyme. Sauté for about 5-7 minutes until golden brown.
  4. In a bowl, combine panko crumbs, parmesan, and parsley.
  5. Mix cooled sautéed mixture with softened Boursin cheese until well combined; stir in half of the panko mixture for texture.
  6. Drizzle olive oil over mushroom caps and fill generously with the cheese mixture.
  7. Top each filled mushroom with the remaining panko mixture.
  8. Bake for about 20 minutes until tender; broil briefly for extra crispness if desired.
