  • ¾ cup water
  • 3 cups chopped broccoli
  • 1 medium honeycrisp apple
  • 1 small lemon
  • 2 ½ TBSP extra virgin olive oil
  • 1 TBSP apple cider vinegar
  • 1 TBSP dijon mustard
  • ½ TBSP honey
  • â…“ cup crumbled feta cheese (optional)
  • â…“ cup toasted nuts (I like using walnuts + almonds)
  • ¼ tsp sea salt (plus extra to taste)
  • â…› tsp freshly ground black pepper (plus extra to taste)
  • Dried cranberries (optional)
  • Extra sharp white cheddar (in place of feta)

Instructions

  1. Rinse quinoa under cold water, then combine with water in a medium pot. Bring to a boil, reduce heat, cover, and simmer for 13 minutes until liquid is absorbed. Fluff with a fork.
  2. While quinoa cooks, chop broccoli into bite-sized pieces and dice the honeycrisp apple.
  3. In a mixing bowl, whisk together lemon juice, olive oil, apple cider vinegar, dijon mustard, honey, salt, and pepper until combined.
  4. In a large bowl, mix cooked quinoa with chopped broccoli and diced apple. Pour dressing over the mixture; toss gently to combine.
  5. Serve immediately or chill for 30 minutes to enhance flavors.
