  • Dressing: olive oil, apple cider vinegar, dijon mustard, honey, sea salt, and black pepper

Instructions

  1. Rinse quinoa under cold water and cook with ¾ cup of water in a pot over medium heat until absorbed (about 13 minutes). Fluff with a fork.
  2. Chop broccoli into bite-sized pieces and dice the honeycrisp apple. Toast nuts in a skillet until golden.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, sea salt, and black pepper.
  4. In a large bowl, combine cooked quinoa, broccoli, apple, nuts, dried cranberries (if using), and cheese if desired. Pour dressing over and mix gently.
