  • 320 g dark brown sugar

  • 140 g unsalted butter (room temp)
  • 283 g whole milk (room temp)
  • 2 eggs (room temp)
  • 1 tbsp cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 227 g unsalted butter (room temp) for frosting
  • 12 oz cream cheese (cold) for frosting
  • 340 g powdered sugar (sifted) for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In one bowl, whisk together flour, brown sugar, baking powder, salt, and spices.
  3. In another bowl, mix butter, oil, milk, eggs, and vanilla until smooth.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Divide batter between pans and bake for about 35 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes before transferring to a cooling rack.
  7. For frosting: Beat butter and cream cheese together; add powdered sugar gradually until fluffy.
  8. Once cool, layer cake with frosting in between and on top.
