  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
  2. In a saucepan over low heat, melt the semisweet chocolate and butter until smooth.
  3. Remove from heat; stir in granulated and brown sugars until combined.
  4. Add eggs one at a time, whisking well after each addition.
  5. Sift together flour, cocoa powder, and salt; fold into the wet mixture until just combined.
  6. Pour batter into the prepared pan and bake for 20–25 minutes; check doneness with a toothpick.
  7. Allow brownies to cool before cutting them into small squares for petit fours.
  8. For the ganache, heat heavy cream until simmering; pour over chopped chocolate and let sit before stirring until smooth.
  9. Generously coat each brownie piece with ganache and sprinkle with fleur de sel.
