  • 2 packs (400 g each) artisanal flatbread
  • 5 tablespoons pesto
  • 1 cup fresh mozzarella, sliced
  • 4 roma tomatoes, diced
  • 0.25 cup fresh basil leaves, thinly sliced
  • 2 cloves garlic, minced
  • 0.25 cup grated parmesan cheese
  • 0.5 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste

Instructions

  1. Preheat your oven to 220°C (425°F).
  2. In a bowl, mix diced tomatoes, basil, garlic, parmesan cheese, balsamic vinegar, olive oil, and salt until well combined.
  3. Arrange flatbreads on a lined baking sheet and spread pesto evenly on each.
  4. Top with slices of mozzarella.
  5. Bake for about 10 minutes until the cheese is bubbly and edges are golden brown.
  6. Allow to cool briefly before spooning on the bruschetta mixture.
  7. Drizzle with balsamic glaze and garnish with more basil and parmesan if desired.
