  • 1 lb boneless skinless chicken breast
  • ½ cup blue cheese dressing (or ranch)
  • 2 tablespoons butter
  • ½ cup yellow onion (diced)
  • 1 stick celery (diced)
  • 3 cloves garlic (minced)
  • 14.5 oz diced tomatoes (undrained)
  • 4 cups chicken broth
  • 1 lb penne pasta
  • ½ cup buffalo sauce
  • 8 oz cream cheese (softened)
  • 1.5 cups cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Prepare the cheeses by letting them reach room temperature.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add and cook the diced chicken until browned.
  3. Remove the chicken and sauté onions, celery, and garlic in the remaining butter until softened.
  4. Return chicken to the skillet and add diced tomatoes, buffalo sauce, chicken broth, and penne pasta.
  5. Bring to a boil then cover and simmer on low for about 15 minutes or until pasta is tender.
  6. Stir in cream cheese until melted followed by cheddar and mozzarella until creamy.
  7. Serve hot; add red pepper flakes for an extra kick if desired.
