  • 1/2 pound mezzi rigatoni (or small-shaped pasta)
  • 1 1/4 cup cheddar cheese (shredded)
  • 3/4 cup smoked gouda cheese (shredded)
  • 1/2 cup parmesan cheese (shredded)
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • Seasonings: salt, nutmeg, ground pepper, tabasco sauce

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour for about 1 minute until bubbly.
  3. Gradually add milk while whisking continuously until smooth.
  4. Stir in cheddar, smoked gouda, and parmesan cheeses until melted; season with salt, nutmeg, ground pepper, and tabasco sauce.
  5. Fold in cooked pasta and mashed butternut squash until evenly coated.
