  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 1 egg yolk (for dough)
  • 1 egg (for wash)
  • 200 grams mozzarella cheese

Instructions

  1. Roast the garlic head at 160°C (320°F) for about 2 hours until soft.
  2. Combine warm milk, active dry yeast, and honey; let it proof for about 10 minutes.
  3. In a mixing bowl, combine all-purpose flour, bread flour, softened butter, salt, two egg yolks, and the yeast mixture; mix to form a dough.
  4. Knead the dough for approximately 15–20 minutes until smooth and elastic.
  5. Let the dough rise in a warm spot for about 1 hour and 30 minutes until doubled in size.
  6. Roll out the dough to about 1/4 cm thickness, spread roasted garlic butter over it, and sprinkle mozzarella cheese on top.
  7. Roll tightly into a log shape and cut into six portions. Let them proof again on a baking sheet for another 30 minutes.
  8. Preheat the oven to 175°C (350°F), brush the rolls with egg wash, and bake for about 20–25 minutes until golden brown.
