  • 1 lb. chicken breasts
  • ½ cup 0% Greek yogurt
  • ¼ cup mayonnaise
  • 810 ounces romaine lettuce
  • 1 large egg
  • ⅓ cup panko breadcrumbs
  • ½ cup grated parmesan cheese
  • Fresh lemon juice

Instructions

  1. Mix the dressing ingredients (Greek yogurt, mayonnaise, Dijon mustard, Parmesan, capers, garlic, anchovy paste, lemon juice, salt, and pepper) in a bowl until smooth.
  2. Toss chopped romaine lettuce and grated hard-boiled eggs in a separate bowl; drizzle some dressing over and mix gently.
  3. Season chicken cutlets with salt and pepper. Set up three bowls: one with beaten egg mixed with milk, another with cornstarch seasoned with salt and pepper, and the last with breadcrumbs mixed with Parmesan.
  4. Dip each cutlet first in cornstarch, then in the egg mixture, followed by the breadcrumb mixture.
  5. Air fry at 375°F for about 15 minutes or until golden brown.
  6. Serve atop the salad alongside lemon wedges.
