  • 1/2 cup tomato sauce (canned)
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar (optional)

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar or American, freshly shredded
  • 1/4 tsp paprika
  • salt (pinch)
  • 4–6 brioche hamburger buns (split, toasted)
  • softened butter (for toasting, as needed)
  • freshly ground black pepper (to finish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add ground chicken and cook until no longer pink (5–7 minutes). Stir in chopped onion and cook until translucent (3–4 minutes). Add garlic and Cajun seasoning; cook until fragrant (1 minute). Mix in tomato paste, broth, tomato sauce, and Worcestershire sauce. Simmer for 8–10 minutes until thickened.
  2. For the cheese sauce: Melt butter in a small saucepan over medium heat. Whisk in flour to form a roux (1 minute), then slowly add milk while whisking continuously until thickened (4–5 minutes). Stir in shredded cheese and paprika until smooth.
  3. Toast brioche buns and assemble by spooning Cajun chicken onto each bun, topping with cheese sauce.
