  • 1 red bell pepper
  • 3 tablespoons butter
  • 1 ½ cups chicken broth
  • ¾ cups heavy cream
  • 10 oz Rotel diced tomatoes with green chilies
  • Cajun seasoning
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon olive oil (or avocado oil)
  • 3 tablespoons flour
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • 1 teaspoon brown sugar
  • ½ teaspoon EACH: mustard powder, oregano
  • 1 pinch EACH: cayenne pepper, red pepper flakes
  • Lime Wedges
  • Fresh Cilantro (roughly chopped)

Instructions

  1. Gather all ingredients and ensure shrimp are peeled and deveined.
  2. In a skillet over medium heat, sauté diced bell pepper in olive oil for about 3 minutes until softened.
  3. Add minced garlic and butter; cook until fragrant (about 1 minute).
  4. Sprinkle flour into the skillet, stirring to form a roux, cooking for about 2 minutes.
  5. Gradually add chicken broth while stirring to prevent lumps; then mix in heavy cream, honey, hot sauce, tomatoes (with juice), lime juice, and seasonings.
  6. Simmer for 5-7 minutes until slightly thickened.
  7. Stir in shrimp and cook until pink and opaque (5-7 minutes).
  8. Remove from heat and stir in cheese until melted. Serve hot over rice or pasta.
