  • 1 1/2 cups dry Calrose Sushi Rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab, chopped
  • 1/2 cup diced English cucumber
  • 1 large avocado, sliced
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • Nori sheets (for garnish)
  • Black and toasted sesame seeds

Instructions

  1. Rinse the sushi rice in a mesh sifter to remove excess starch. Cook it in a rice cooker with water until tender.
  2. Transfer the cooked rice to a rimmed baking sheet and mix in seasoned rice vinegar gently.
  3. Combine Japanese mayonnaise and sriracha in a separate bowl to make spicy mayo.
  4. Prepare toppings: chop imitation crab, dice cucumber, and slice avocado.
  5. Assemble each bowl with sushi rice as the base, then add toppings of crab, cucumber, and avocado. Drizzle spicy mayo over the top and garnish with nori and sesame seeds.
