  • 3 large organic grapefruits
  • 3 cups filtered water (plus extra for blanching)
  • 3 cups granulated sugar (plus extra for rolling)

Instructions

  1. Wash the grapefruits to remove dirt and pesticides.
  2. Cut off both ends of each grapefruit and slice the peels into 1/4-inch strips.
  3. Blanch the peels in boiling water for 10 minutes, then drain and rinse under cold water.
  4. In a pot, mix 3 cups of filtered water with 3 cups of sugar over medium heat until dissolved.
  5. Add the blanched peels and simmer on low heat for about 60–70 minutes until translucent.
  6. Remove from syrup using a slotted spoon, place on a cooling rack, and roll in extra sugar before drying completely.
