  • 4 boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 medium Roma tomatoes
  • 1 cup large basil leaves
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Marinate the chicken by whisking olive oil, balsamic vinegar, Dijon mustard, Italian seasoning, minced garlic, salt, and pepper together. Coat the chicken breasts in the marinade and refrigerate for at least one hour (up to 24 hours).
  2. Preheat the oven to 400°F. Line a baking sheet with foil and spray with non-stick cooking spray.
  3. Make deep cuts in each chicken breast without cutting through completely. Fill each cut with slices of mozzarella, tomato, and basil.
  4. Bake for 25-30 minutes or until the internal temperature reaches 165°F.
  5. Allow to rest for five minutes before drizzling with balsamic glaze and garnishing with additional basil.
