  • 12 oz. mild Italian sausage (or turkey/chicken sausage)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups cauliflower florets (about 1 1/4 pounds)
  • 1 (32 oz.) carton chicken broth (or vegetable broth)
  • 1 cup half-and-half (or coconut milk for dairy-free)
  • 4 cups chopped curly kale
  • Kosher salt and fresh black pepper to taste
  • Red pepper flakes for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, about 8-10 minutes. Remove sausage with a slotted spoon.
  2. In the same pot, sauté diced onion for 3-4 minutes until soft, then add minced garlic and cook for an additional 30 seconds.
  3. Stir in cauliflower florets and chicken broth; season with salt and pepper. Simmer uncovered for about 15 minutes, or until cauliflower is tender.
  4. Puree the soup until smooth using an immersion blender or regular blender (allow steam to escape).
  5. Return the soup to low heat, stir in half-and-half, cooked sausage, and kale; simmer until kale wilts, about 5 minutes. Adjust seasoning if needed.
