  • 3 lb spaghetti squash
  • 2 cups chopped fresh broccoli
  • 23 cloves garlic
  • ½ cup heavy cream
  • 1 TBSP cream cheese (optional)
  • ½ cup grated parmesan cheese
  • ¼ cup grated cheddar cheese
  • ½ tsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve the spaghetti squash and scoop out seeds. Drizzle with olive oil, salt, and pepper; place cut-side down on a baking sheet lined with parchment paper.
  2. Roast for about 30-40 minutes until tender. Meanwhile, sauté chopped broccoli and minced garlic in olive oil until bright green.
  3. In a bowl, mix heavy cream, cream cheese (if using), garlic powder, and cheeses until combined.
  4. Once the squash is done, scrape strands into a large bowl. Add sautéed broccoli and cheese mixture; stir until well combined.
  5. Transfer back into squash halves or a baking dish, top with extra cheddar cheese, and bake for an additional 10-15 minutes until bubbly.
