  • 2 boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rotini pasta in salted boiling water until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, onion powder, salt, and pepper; cook until browned (6–7 minutes). Remove chicken and set aside.
  3. In the same skillet, melt butter over medium heat; sauté minced garlic until fragrant. Pour in chicken broth and heavy cream; simmer gently.
  4. Stir in mozzarella and other cheeses until melted into a creamy sauce.
  5. Add cooked rotini and chicken back into the skillet; toss to coat well. Simmer for another 2–3 minutes.
