  • 2 large chicken breasts (or 4 medium/small)
  • 1 Tbsp olive oil
  • Kosher salt & black pepper
  • 3 Tbsp butter
  • 1 Tbsp chicken base
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • Optional: 1/4 cup heavy cream

Instructions

  1. Season chicken breasts with kosher salt and black pepper.
  2. In a large skillet, heat olive oil over medium heat. Cook chicken for about 5 minutes on each side until cooked through (165°F internal temperature). Remove and set aside.
  3. Lower heat to medium-low, add butter and chicken base until melted. Stir in flour, onion powder, and garlic powder to make a roux for about 30 seconds.
  4. Gradually pour in chicken stock while scraping the pan's bottom for flavor. Add water and whisk until smooth; simmer until thickened.
  5. Stir in heavy cream if using. Shred the cooked chicken and return it to the gravy with any juices from the plate; simmer together.
  6. Serve over mashed potatoes, adjusting seasoning as needed.
