  • 1.5 lb chicken breasts (boneless & skinless)
  • 68 oz pasta (cellentani, penne or bowtie)
  • 2 heads romaine lettuce (sliced)
  • ¾ cup mayonnaise
  • 3 Tbsp lemon juice
  • ¼ cup parmesan cheese
  • â…“ cup croutons or breadcrumbs
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried dill
  • ½ tsp garlic powder
  • 2 Tbsp capers and brine
  • 3 Tbsp dijon mustard
  • ½ Tbsp Worcestershire sauce
  • 23 Tbsp water

Instructions

  1. Cook the pasta according to package instructions (about 20 minutes). Drain and rinse under cold water.
  2. Season chicken breasts with salt, pepper, dill, and garlic powder. Cook in a greased pan over medium-high heat for about 8-10 minutes per side until cooked through. Let rest before slicing.
  3. Blend mayonnaise, lemon juice, capers (with brine), dijon mustard, Worcestershire sauce, salt, pepper, and water in a food processor until smooth.
  4. In a large bowl, combine cooled pasta, sliced romaine lettuce, parmesan cheese, sliced chicken, and three-quarters of the dressing. Toss well and add croutons right before serving.
