  • 1 lb boneless, skinless chicken breast
  • 12 oz chow mein noodles
  • 2 cups cabbage
  • 1 large carrot (julienned)
  • 1/2 bunch green onions
  • 3 tbsp oil
  • 2 garlic cloves (minced)
  • 4 tbsp oyster sauce or alternative
  • 3 tbsp low sodium soy sauce
  • 3 tbsp light sesame oil
  • 1/2 cup chicken broth
  • 1 tbsp corn starch
  • 1 tbsp granulated sugar

Instructions

  1. In a small bowl, whisk together oyster sauce (or alternative), sugar, sesame oil, soy sauce, chicken broth, and corn starch. Set aside.
  2. Cook chow mein noodles according to package instructions. Drain and rinse under cold water; set aside.
  3. In a large wok or pan over medium heat, heat oil and sauté bite-sized chicken pieces until golden brown. Remove from the pan.
  4. In the same pan, stir-fry julienned carrots, cabbage, and minced garlic until slightly softened.
  5. Add cooked chicken and noodles to the pan along with the prepared sauce. Stir-fry for an additional two minutes to combine flavors.
  6. Garnish with chopped green onions before serving hot.
