  • 3 cups dry egg noodles
  • ¾ cup plus 1 tablespoon unsalted butter
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • ¾ cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • ¾ cup heavy whipping cream
  • 2 cups frozen peas and carrots
  • 2 cups cooked, chopped chicken
  • Topping: 18 saltine or Ritz crackers

Instructions

  1. Preheat your oven to 350°F.
  2. Cook the egg noodles in salted water according to package instructions but undercook by one minute. Drain and rinse under cold water.
  3. In a large saucepan, melt ¾ cup of butter over medium heat. Add minced garlic and seasonings; sauté for one minute.
  4. Stir in flour until fully combined to create a roux.
  5. Gradually whisk in chicken broth and heavy cream; cook for about 4 minutes until slightly thickened.
  6. Combine cooked noodles, sauce, peas and carrots, and chicken in a greased baking dish.
  7. Crush crackers into crumbs, mix with melted butter, and sprinkle on top of the casserole.
  8. Bake for about 20 minutes or until bubbly around the edges.
