  • 2 cups cooked rice
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon pomegranate seeds (optional)
  • 1 tablespoon lemon juice (for drizzling)

Instructions

  1. Heat a skillet over medium-high heat. Cut chicken into bite-sized pieces.
  2. Mix spices with olive oil to create a paste. Coat chicken with this mixture.
