  • 23 tablespoons curry powder
  • 1 (14.5 oz) can crushed tomatoes
  • 1.5 pounds sweet potatoes, cut into 1-inch pieces
  • 1 can (13.5 oz) full-fat unsweetened coconut milk
  • 3 cups chopped baby spinach
  • Juice of 1 lemon

Instructions

  1. Heat oil in a large sauté pan over medium-high heat. Add onion and chili pepper with salt; sauté until softened.
  2. Add chicken and cook until browned; stir occasionally.
  3. Stir in garlic, ginger, curry powder, and spices; cook for about 1 minute.
  4. Pour in crushed tomatoes, sweet potatoes, and coconut milk; bring to a gentle boil then simmer for 15 minutes.
  5. Add spinach and cover until wilted; adjust seasoning as needed.
  6. Stir in lemon juice before serving hot over rice or with flatbread.
