  • 5 carrots, chopped

  • 10 tbsp butter, divided
  • 4 tbsp flour
  • 2 cups milk
  • Optional: 3-4 cups cubed bread for topping

Instructions

  1. Preheat the oven to 350°F (175°C). In a large baking dish, combine onion, carrots, celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  2. While baking, melt 4 tablespoons of butter in a saucepan over medium heat. Stir in flour, salt, and poultry seasoning; cook for about one minute. Gradually whisk in milk until smooth.
  3. After the rice is cooked, fold in raw chicken pieces and creamy sauce into the dish.
  4. For an optional topping, mix remaining melted butter with cubed bread and sprinkle it over the casserole.
  5. Increase oven temperature to 450°F (232°C) and bake uncovered for an additional 20-30 minutes until chicken is cooked through and bread cubes are golden brown.
