  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips

Instructions

  1. Prepare the crust by mixing vanilla wafer crumbs, brown sugar, and melted butter until combined. Press into a pie dish.
  2. Bake at 350°F (175°C) for about 10 minutes until golden. Allow cooling completely.
  3. In a bowl, combine mascarpone, confectioner’s sugar, vanilla extract, cinnamon, lemon zest, and ricotta. Mix until smooth.
  4. Whip cream to stiff peaks and fold into the cheese mixture along with half the chocolate chips.
  5. Spoon filling into cooled crust and top with remaining whipped cream and chocolate chips.
  6. Chill in the refrigerator for at least 8 hours before serving.
