  • 1 cup granulated sugar (200 grams)
  • 1 teaspoon vanilla
  • 1 large egg (room temperature)
  • 1¼ cups flour (163 grams, fluffed and levelled)
  • â…“ cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream unsalted butter and granulated sugar together until fluffy. Add in vanilla extract and egg, mixing until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually incorporate this mixture into the wet ingredients until just combined.
  4. Scoop dough onto the prepared baking sheet and chill in the fridge for 30 minutes.
  5. Bake for 10 minutes until edges are set but centers still look soft.
  6. While cooling, prepare the mint frosting by beating powdered icing sugar, butter, milk, and mint extract together until fluffy.
  7. For the ganache, melt semisweet chocolate chips with oil until smooth; drizzle over frosted cookies.
