  • 220 millilitres Whole milk
  • 1 packet (11 grams) Fast-action dried yeast
  • 50 grams Caster sugar
  • 1 medium Egg (room temperature)
  • 1 medium Egg yolk (room temperature)
  • 460 grams Strong white bread flour (plus more for dusting)
  • 50 grams Cocoa powder
  • 1 teaspoon Salt
  • 60 grams unsalted butter (room temperature)
  • 120 grams light brown sugar/muscovado sugar
  • 4 teaspoons ground cinnamon
  • 1 large Orange (zest only)
  • 50 grams Milk chocolate
  • 75 grams Full-fat cream cheese (room temperature)
  • 50 grams Icing sugar
  • 1 large Orange (juice only)

Instructions

  1. Melt unsalted butter and mix with warm milk to activate yeast with sugar. Let sit until bubbly.
  2. Combine with eggs, flour, cocoa powder, and salt to form a soft dough.
  3. Knead on a floured surface until smooth (about 10 minutes).
  4. Allow dough to rise in a warm area until doubled in size (1-2 hours).
  5. Prepare filling by mixing butter, brown sugar, cinnamon, and orange zest.
  6. Roll out dough into a rectangle and spread filling evenly.
  7. Roll tightly into a log shape and slice into equal pieces.
  8. Place slices cut-side up in a greased dish and let rise again (1 hour).
  9. Bake at 180°C (350°F) for about 20 minutes until golden brown.
  10. Prepare frosting by melting chocolate and mixing with cream cheese, icing sugar, and orange juice.
  11. Drizzle frosting over warm rolls before serving.
