  • 1 cup milk (dairy or non-dairy)
  • 1 3/4 cups white flour (+ 3/4 cup separated)
  • 1/4 cup dark cocoa powder
  • 1/4 cup vegetable oil or melted coconut oil
  • 1/4 cup white sugar
  • 1/2 tbsp instant active dry yeast
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup creamy peanut butter
  • 23 tbsp sugar (for filling)
  • 1/4 cup chocolate chips
  • 4 oz cream cheese (for frosting)
  • 4 tbsp unsalted butter (for frosting)
  • 12 tbsp peanut butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • pinch of salt (for frosting)
  • chopped peanut butter cups (for serving)

Instructions

  1. Activate yeast by combining milk, oil, and sugar in a pot; heat to about 120F and sprinkle yeast on top. Let it sit.
  2. Mix in flour and cocoa powder; cover and let rise for about an hour.
  3. Add salt, baking powder, baking soda, and remaining flour; knead until smooth. Cut an X on top and let rise again for at least 6 hours or overnight.
  4. Roll out dough into a rectangle, spread heated peanut butter evenly, sprinkle sugar and chocolate chips.
  5. Roll up tightly from one side; slice into 1½–2 inch thick pieces and place in a greased pan.
  6. Cover and let rise for another hour before baking at 375F for about 15–18 minutes.
  7. Prepare frosting while rolls bake: mix cream cheese, peanut butter, butter, then add powdered sugar until creamy.
  8. Frost cooled rolls with the mixture and enjoy!
