  • 68 cups chopped romaine lettuce
  • 1 red apple (diced)
  • 1 anjou pear (diced)
  • ½ red onion (chopped)
  • â…“ cup dried cranberries
  • â…“ cup crumbled feta cheese
  • â…” cup pecans (or walnuts)
  • â…“ cup apple juice
  • â…“ cup apple cider vinegar
  • â…“ cup olive oil
  • 2 tablespoons honey
  • ¼ teaspoon black pepper
  • â…“ cup brown sugar
  • ¼ teaspoon cinnamon

Instructions

  1. In a jar, combine the apple juice, apple cider vinegar, olive oil, honey, and black pepper. Shake well to mix and set aside.
  2. In a large bowl, combine chopped romaine lettuce, diced apples and pears, chopped onion, dried cranberries, and crumbled feta cheese.
  3. In a medium pan over medium heat, toast the pecans (or walnuts) for about 1-2 minutes until fragrant. Add brown sugar and cinnamon; stir until the sugar dissolves.
  4. Once cooled slightly, chop the candied pecans and add them to the salad mixture.
  5. Pour the dressing over the salad just before serving and toss gently to combine.
