  • ⅓ cup sour cream
  • ⅓ cup heavy cream
  • 4 eggs
  • 1 box chocolate cake mix
  • ⅓ cup cocoa powder
  • 2 cups cold butter (cut into chunks)
  • 10 cups powdered sugar
  • 2 tablespoons vanilla extract
  • Green gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, combine the vegetable oil, sour cream, heavy cream, eggs, chocolate cake mix, cocoa powder, and espresso powder (if using). Whisk until smooth.
  2. Line muffin tins with cupcake liners and fill each about two-thirds full with batter. Bake for approximately 15 minutes or until a toothpick comes out clean.
  3. Allow cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  4. For the frosting, beat cold butter in a mixing bowl until creamy. Gradually add powdered sugar and heavy cream while mixing until smooth. Mix in vanilla extract and a pinch of salt, then add green gel food coloring until desired shade is achieved.
  5. Using a piping bag fitted with an M piping tip, frost each cooled cupcake to resemble Christmas trees. Decorate with golden star sprinkles and holiday sprinkles.
