  • 1 tablespoon apple cider vinegar

  • 1 jalapeño or red chili
  • 4 cups baby spinach
  • 1 cup cherry tomatoes
  • 1/2 cup corn kernels
  • 1 large avocado

Instructions

  1. Prepare the marinade by blending together cilantro, garlic, lime juice, apple cider vinegar, olive oil, jalapeño, salt, and pepper until smooth.
  2. Marinate the chicken in half of the mixture for at least one hour.
  3. Grill the marinated chicken over medium heat for 12-14 minutes until cooked through.
  4. While grilling, combine spinach, cherry tomatoes, corn, and avocado in a bowl.
  5. Slice grilled chicken and add it to the salad. Drizzle with remaining marinade and toss gently before serving.
